Flair 58 is a fully-manual, professional grade, lever espresso press that is focused on maximizing the workflow and the espresso from at-home extractions. This newest gold standard in manual espresso features Flair’s first industry standard 58mm portafilter as well as a more robust frame and lever for ease of extractions at higher pressures. The 58 also includes specific customer requested upgrades to the preheating and workflow process by providing our Preheat Temperature Controller and a new valve plunger, which includes a puck screen. Just set your brew head to one of three heat settings to ensure proper preheat and thermal control in every shot. Add your brew water without the need to remove the stem!
2023 Version
In May of 2023, the Flair 58 family, including the Flair 58x, will feature key upgrades in both functionality and aesthetics.
- Detachable Preheat Cable - Flair 58x is Preheat Enabled - In 2023, all Flair 58s will feature a detachable preheat cable, meaning customers can brew using the preheat function, or unplug to take their Flair off grid. The Flair 58x, therefore, will now come to all customers as “Electric Enabled,” meaning all wiring for electric preheat will be present in the brew head they receive. To upgrade, they will simply need to purchase the Preheat Controller System Kit.
- Mirror Upgrade Enabled - All Flair 58s, in 2023, will feature a stainless steel disc that has been embedded into the post of the lever assembly. This disc allows any Flair 58 or 58x buyer to upgrade to the magnetic, articulating shot mirror and add it to their setup with ease. The mirror adheres with enough force to consistently stay in place, while also being easy to remove when packing up or traveling.
- Angled Elbow Connector - As part of the upgraded brew cylinder connector, Flair has added an angled attachment for the preheat controller, meaning that customers will more easily be able to route the wiring of their Flair 58 down the back post to maintain a high level of aesthetic beauty. In addition, the preheat system features new software that alerts when the connection to electrical has been severed.
- Enhanced Valve Plunger with Single Slot - All Flair 58s, in 2023, will come standard with an enhanced plunger with a single slot, as opposed to the dual slot version from previous models. The benefits of this iteration are improved valve function when filling the brew cylinder and a reduced potential for the stem to raise from the plunger when stem tabs fall into alignment with the smaller single slot.
Introducing Espresso!
Brewing espresso - by hand - with the Flair is a mixture of science and art. The Flair is like a hand tool; it will follow your decisions and actions. Your espresso’s taste and crema is most dependent on the quality and freshness of your coffee beans and finding the right grind size.
How Do I Get Good Crema?
Crema is only obtained when your espresso is brewed correctly. Start with brew temperatures between 91 - 96c, ensure your beans are freshly roasted and ground, and that you experiment with different grind and dose sizes. It may take practice to get it right. Don’t forget, we’re here to help!
#1 - Prepare the flair
(a) Preheat your Flair 58
(b) Insert portafilter for preheat by aligning it with the brew base and
(c) rotate the portafilter handle counterclockwise until it is firmly in place, at roughly the 4 o’clock position (Do not over-rotate)
#2 - Prepare the Portafilter & Brew Head
(a) Boil water
(b) Grind 18-20 grams of freshly roasted beans with burr grinder
(c) Remove portafilter from brew base, add grounds and tamp
(d) Add puck screen on top of tamped grounds and re-insert portafilter
(e) Fill your brew head using the valve plunger as described previously
#3 - Brew your Espresso
(a) Slowly lower lever to build pressure and begin brewing
(b) Target a shot duration of 30-35 seconds at 6-9 BAR
(c) When desired shot weight/volume is reached, or lever is fully lowered, raise the lever to start position
#4 - Purge your System
(a) Place an empty cup on drip tray
(b) Expel remaining brew water by lowering lever all the way down and allow the remaining liquid to drain
(c) Rotate portafilter clockwise to remove for cleaning
Cleaning Your Flair
1. Use the stem to pull out plunger while brew cylinder is installed on base.
2. Use damp cloth to wipe the inside and bottom of the brew head. Also wipe the plunger.
3. For more thorough cleaning, place a cup beneath your Flair 58 and flush with cool water before wiping.
Cleaning the Flair is easy. To remove used espresso grounds from your Flair you can knock them out against the side of a trash can or dig the grounds out with a utensil.
Once the grounds are removed, rinse all brewing parts in cool water.
It can impact your espresso’s taste.
Do not clean any Flair parts in a dishwasher.
